Fruit Soda Bread Kebabs & Strawberry Dip

Serves 4

Ingredients

Strawberry Dip

1 small tub of natural fromage frais

4 large strawberries, washed hulled and chopped into small pieces

1 teaspoon icing sugar

Mash the strawberries and icing sugar together, then mix into the fromage frais and pour into a small bowl or jug. Keep chilled.

Kebabs

8 wooden skewers

3 slices of fruit soda bread

8 strawberries, washed and hulled

8 chunks of Pineapple

1 kiwi, peeled and cut into 8 large pieces

8 chunks of melon

8 seedless grapes

To Decorate

Blackberries, raspberries, mint and icing sugar

Method

Place the fruit soda onto a baking tray and toast in a hot oven until golden brown, then thread two of them onto each skewer along with a piece of each fruit to make the kebabs.

Serve two kebabs per person, along with a little of the dip.

Decorate with the blackberries, raspberries, a sprig of mint and dust with a little icing sugar.
