Toasted Honey & Raisin Loaf with Ricotta, Raspberries and Honey

Serves 4

8 slices of Rankins honey and raisin loaf
200g pot of ricotta
1 vanilla pod, deseeded or 2-3 drops vanilla extract.
12 mint leaves shredded, plus extra to serve
1 punnet raspberries or blueberries
2 tablespoons runny honey
Icing sugar to decorate

Method

Heat the grill to high and toast the honey and raisin loaf on both sides until golden.

Meanwhile put the ricotta into a bowl and stir in the vanilla seeds or extract. Place the ricotta on top of the toasted bread and arrange your choice of berries with the shredded mint leaves on top of the ricotta and drizzle with the honey. Dust with icing sugar and serve.
