GUINNESS WHOLEGRAIN BREAD
Miniature Hamburgers on Guinness Wholegrain Bread with Fried Onions and Cashel Blue
You will need a 2inch round pastry cutter
Pre heat oven to 170oC/ 325oF/ gas 3
Makes 12 mini burgers
480g (1 lb) Lean minced steak
½ small onion finely chopped
1 clove garlic, crushed
1 egg, lightly beaten
Combine all of the ingredients together and forms into 12 meatballs, (roughly 40g each) flatten out slightly to make discs 2 inches in diameter. Fry over a medium heat in a little oil, for 5 minutes on each side until golden brown and thoroughly cooked. Wrap in tinfoil and set aside to rest and keep warm.
12 x 2 inch discs of Guinness Wholegrain Bread, toasted on one side
12 small pieces of Cashel Blue cheese
Mustard mayonnaise
1 onion cut in half and thinly sliced. Fried in a little oil until soft and golden.
12 cocktail sticks
Place a squirt of mustard mayonnaise on each of the bread discs, toasted side up, place the cooked burger on top, then the fried onions and top with Cashel Blue. Secure with a cocktail stick. Place in the oven for 5 mins until the bottom of the bread has toasted and the cheese just starting to melt.
